Mellow Corn is golden straw in colour. Aromas of oak and delicate spice. A full-bodied taste that's textured with a softly spiced sweetness. A sweet and chewy finish like a Barbadian Rum.
Mellow Corn is a straight corn whiskey, aged in used Heaven Hill barrels. Unlike bourbon, which needs to have at least 51% corn in its mashbill and aged in new charred oak barrels, a corn whiskey must contain at least 80% corn in its mashbill. And if it's aged, it can be aged in new uncharred or used oak barrels. Straight corn whiskey is corn whiskey that has been aged for 2 years or more.
There's a few rules for a US whiskey to be labelled BIB. The whiskey must be the product of one distillation season and a single distiller at a single distillery and then aged in a federally bonded warehouse under US government supervision for at least four years. It must be bottled at exactly 100 proof. Additionally, the BIB label must clearly identify the distillery where it was distilled. And if bottled somewhere else, that must be made clear.
