Quiquiriqui is an unaged (joven) Mezcal produced in the Mexican village of Santiage Matatlan. The area is famed for its long history of Mezcal production. Made using Espadin Agave, Quiquiriqui Matatlan is a classic 'house style' mezcal. It has a smooth taste with distinct roasted agave flavours and a peppery finish that is acharacteristic of the Espadin agave. The agave are locally harvested and roasted in traditional fire pits. They are crushed using a Tahona, otherwise known as a stone wheel, and then fermented outside in oak vats relying on natural airborne yeasts. The final process of double distillation is done in small copper stills, resulting in a full flavour mezcal, perfect as a house pour or in cocktails.
