Solbeso cacao spirit is unlikely to be what many people would expect it to be. Chocolate is the primary product most would expect from cacao, but this is derived from the cacao bean, and there is a fruit which surrounds and protects the bean whilst growing on the plant, with its own unique flavour.

This was discovered by Thomas Higbee, after visiting Peruvian cacao plantations and seeing the waste from chocolate production. Curious, he sampled the flesh of the fruit and found it delicious, inspiring to begin work creating Solbeso, an entirely new category of liqueur never before explored.
