Akashi-tai Junmai Ginjo Sparkling Sake is an innovative style of sake from Akashi-Tai, fusing traditional sake brewing methods and Champagne-style secondary fermentation techniques to create the sparkle. Light and refreshing, with citrus fruit flavours and floral hints. Crisp and with just a touch of sweetness, reminiscent of a number of popular Italian sparkling wine styles. Serve lightly chilled as an accompaniment to sushi or other seafood dishes. The Junmai classification indicates that this is a "pure" rice sake, as opposed to a Honjozo style where brewers alcohol is added during fermentation. Ginjo denotes that before production, a minimum of 40% of the outer layers of the rice are polished away to create a more complex and delicate flavour than that found in standard sakes where only 30% is removed.
