Born in the ancient city of Kyoto, KI NO BI (which means 'The Beauty of the Seasons') is a gin-lover's homage to Japanese craftsmanship, terroir, and precise artistry. Established around 2015–2016 by a team who wanted to build the first gin-only distillery in Kyoto, it has quickly made a name for itself in the world of craft spirits.
What sets KI NO BI apart is its intricate six-element production method. The gin starts with a rice spirit base, then blends botanicals like yuzu, gyokuro tea, sansho (Japanese pepper), akamatsu (red pine), bamboo, ginger, and more - many sourced locally in Kyoto Prefecture. Each botanical group is distilled separately, then blended and married using the pure, soft Fushimi water to bring harmony to aroma, texture and flavour.
