Produced in Jerez, this Spanish brandy is unusual within the category in that it is distilled from wine rather than neutral spirit, placing it closer in origin to Cognac while still following the traditional Jerez aging system. Distillation is carried out in copper pot stills, creating a fuller and more aromatic base before maturation.

Aging takes place using the solera system, where younger and older brandies are blended progressively through a series of casks. What distinguishes this expression is its maturation in Oloroso sherry casks, which have previously held oxidative sherry, contributing depth, nuttiness, and a dry richness to the spirit. Over time, the interaction with these seasoned casks introduces complex aldehydes and oxidative notes, shaping both aroma and texture. The "OV" designation refers to "Old Vintages" indicating the inclusion of well-aged components within the solera. The result is a brandy that balances structure and roundness, combining wine-derived character with pronounced cask influence. Compared to sweeter styles, it leans toward a more oxidative and layered profile, with less emphasis on overt sweetness and more on integration.

Served neat, it reveals a gradual evolution in the glass, while a slight dilution can bring forward more delicate aromatic elements.
