Peller Estates has built an international reputation for this style, combining rigorous vineyard management with precise harvesting conditions. Unlike traditional Icewine made from white varieties, this example is crafted from Cabernet Franc, a red grape that brings both aromatic lift and vibrant structure to the finished wine.
The grapes are left on the vine into winter and harvested at temperatures of at least -8°C, ensuring they are naturally frozen at the point of picking. This allows only the concentrated sugars and acids to be extracted during pressing, creating a wine of remarkable intensity. Fermentation takes place slowly at low temperatures to preserve freshness and aromatic clarity.
