Poetic License Old Tom Gin is based on the classic 19th century style of gin, slightly sweeter than the modern London Dry style. Where other Old Toms bring this sweetness with the addition of a little sugar, Poetic License choose to differ by imparting the sweetness entirely through the addition of liquorice root. After distillation, the gin is then rested in oak casks, which impart flavour and a light hint of colour. This is in part to keep it historically accurate, as the original Old Tom gins would have been sold from a wooden cask, glass bottles not being commonly available. Finally, an infusion of rose petals brings a distinct floral character and gives the spirit a rose gold tinge.
