Description

Description:

Produced in Sheffield, this gin reflects a modern interpretation of London dry principles while incorporating a distinctive botanical structure inspired by both local heritage and broader European influences. Locksley Distilling Co. positions this expression as a balance between tradition and innovation, with particular attention paid to texture and aromatic layering. Distillation takes place in a copper pot still using a single-shot method, ensuring that all botanicals are integrated during one continuous distillation rather than blended post-process. The base spirit is a high-purity neutral grain alcohol, selected to provide a clean platform for botanical extraction without introducing extraneous congeners.

The botanical composition is notable for its use of pink grapefruit peel as a defining element, alongside traditional juniper, coriander seed, angelica root, and orris root. Dandelion root is included as a less conventional component, contributing a subtle earthy bitterness and enhancing structural depth. Cardamom and cassia provide a measured spice layer, while the citrus profile is sharpened through the inclusion of both fresh and dried peels. Maceration occurs prior to distillation, allowing heavier botanicals sufficient time to release their essential oils. More delicate elements are carefully balanced to avoid over-extraction, preserving brightness and aromatic clarity. Copper contact during distillation plays a key role in refining the spirit, removing unwanted sulfur compounds and contributing to a smoother mouthfeel.

The distillery emphasizes precise cut points, isolating the heart of the distillate to maintain purity and consistency. Following distillation, the spirit is reduced to bottling strength using demineralized water, ensuring that mineral content does not interfere with the intended flavor profile.

While rooted in London dry methodology, the gin’s profile leans toward a citrus-forward style with a slightly softer juniper presence. The inclusion of dandelion root and grapefruit creates a more contemporary structure, offering both brightness and depth without resorting to post-distillation flavoring or sweetening.

Tasting Notes
Nose:
Fresh pink grapefruit leads with a bright, zesty character, followed by clean juniper and light floral undertones. Subtle spice and a faint earthy note add complexity.

Palate:
Citrus-driven and well-balanced, with grapefruit at the forefront supported by juniper and coriander. Cardamom and cassia introduce gentle warmth, while dandelion root contributes a slight bitterness and depth.

Finish:
Crisp and moderately dry, with lingering citrus peel and soft spice. A light herbal bitterness persists, giving structure to the otherwise bright and refreshing profile.
