Aberfeldy 12 Year Old Highland Single Malt Whisky 70cl exhibits flavours of honey, rich fruit, cream, orange toffee, nuts, spice and a whiff of peat smoke. The Aberfeldy distillery pipes its water directly to the distillery from the Pitilie Burn, prized locally for its purity and rich mineral content. This unique water source is combined with unpeated Scottish malted barley and yeast, which is then fermented. The fermentation is longer than average, taking at least 70 hours. This allows for more fruity honeyed flavours to develop. Distillation takes place in a twin set of copper pot stills for both the wash and the spirit. All are indirectly heated using steam coils. The tall vertical necks are designed to produce a lighter style of new make spirit. Maturation takes place mainly in white American oak ex-Bourbon barrels, with approximately 10% of the whisky aged in used European oak. |
