Produced by the historic Champagne Deutz in the village of Ay, this cuvee represents the house’s prestige Blanc de Blancs, made exclusively from Chardonnay and released only in selected vintages. The 2011 vintage is defined by finesse and precision rather than power, shaped by a long and uneven growing season that ultimately preserved acidity and aromatic clarity. All fruit is sourced from high-quality vineyards, primarily within the Cote des Blancs, including Grand Cru sites such as Avize, Le Mesnil-sur-Oger, and Oger, with a small proportion from Villers-Marmery. This terroir is known for chalk soils that contribute minerality and structure, particularly suited to Chardonnay-based Champagne.
Vinification is carried out parcel by parcel, with each plot fermented separately in stainless steel tanks. Only the first pressing juice is used, ensuring purity and precision in the base wines. Both alcoholic and malolactic fermentation are completed before blending, allowing the house to control balance between freshness and roundness. Following blending, the wine undergoes extended ageing on lees for approximately seven years, followed by additional time after disgorgement before release. This prolonged maturation contributes to texture development, fine mousse, and integration of flavours, while maintaining the linear structure typical of Blanc de Blancs.
Unlike non vintage Champagne, this is a single vintage expression, meaning the profile reflects the specific climatic conditions of 2011. The result is a style focused on elegance, minerality, and layered fruit rather than weight or richness. The overall structure is refined and precise, combining citrus, orchard fruit, and floral elements with a clear mineral backbone and fine effervescence.
