These apples are harvested, washed, crushed, and pressed to produce juice, which is then fermented into cider. Fermentation typically lasts several weeks, allowing natural or selected yeasts to convert sugars into alcohol while developing aromatic precursors.
Distillation takes place in traditional copper stills, often using a double distillation method in the Pays d'Auge style. This process concentrates flavour compounds while removing unwanted elements, producing a clear apple spirit. Copper contact is essential in refining the distillate and preserving aromatic clarity. The spirit is then aged in French oak casks, typically between two and three years for this "Fine" designation.
