Brugal, founded in 1888, is known for a production approach that emphasises clean distillation and controlled ageing, even in its lighter releases. The base material is molasses derived from sugarcane, fermented using selected yeast strains under controlled conditions. Fermentation is typically managed to produce a relatively clean wash, limiting the formation of heavier congeners and supporting a lighter final profile.
Distillation is carried out in continuous column stills, allowing for high levels of rectification. This produces a refined spirit with a relatively low congener content compared to heavier Caribbean rum styles. The aim is to create a clean base suitable for both ageing and filtration. Unlike unaged white rums, this expression undergoes a period of ageing in oak casks, usually ex-bourbon barrels. The tropical climate accelerates interaction between spirit and wood, introducing light notes of vanilla and soft spice. After ageing, the rum is charcoal filtered to remove colour, resulting in a clear appearance while retaining some of the underlying cask influence.
This filtration process is central to the style, allowing the rum to maintain a degree of complexity while presenting as a white spirit.
