Produced in Normandy, France, this expression represents a blended Calvados from the Pays d’Auge appellation, a region known for its stricter production standards and use of double distillation. Boulard, established in 1825, is one of the most recognised producers in the category, with a focus on balancing fruit character and oak influence. Production begins with a blend of cider apples, selected from multiple varieties to achieve a balance of sweetness, acidity, and tannin. The apples are pressed into juice and fermented into cider over several weeks, developing the base alcohol and aromatic compounds required for distillation.

Distillation follows the Pays d’Auge requirement of double distillation in copper pot stills. This process concentrates flavour while refining the spirit, producing a clear apple distillate with both freshness and structure. Copper contact plays an important role in removing unwanted compounds and enhancing aromatic clarity. Maturation takes place in French oak casks, where the spirit develops complexity over time. Grande Solage is a blend of Calvados aged for a minimum of around two years, with older components often included to provide additional depth. The ageing process introduces notes of vanilla, spice, and light oxidation, while still allowing the apple character to remain prominent.

Blending is central to the style, combining eaux-de-vie of different ages to achieve consistency and balance. Compared to older Calvados expressions, the oak influence is moderate, and the profile remains relatively fresh and fruit-forward. The overall style is approachable yet structured, offering a clear expression of apple supported by light oak and gentle spice. It sits between youthful Calvados and more mature, heavily oxidised styles.
