Description

Description:

Created as a commemorative blend marking the founding year of the Dennery distillery, this expression sits at the premium end of the Chairman's Reserve range. Rather than a fixed formula, it is produced as a multi-batch series, with each release built from a selection of aged stocks, reflecting the distillery's blending philosophy and available reserves at the time. Production is centred in Saint Lucia, where molasses-based rum is fermented using controlled methods to produce a balanced wash. The distillery is notable for operating multiple still types, including both column stills and traditional pot stills. This allows for a wide range of distillates, from lighter and cleaner profiles to heavier, more congener-rich spirits.

Blending is the defining stage. Different marques, still types, and age statements are combined to create a layered structure. Column still components provide clarity and refinement, while pot still rums introduce weight, texture, and aromatic intensity. In some releases, small amounts of cane juice distillate are also included, adding a fresher and slightly grassy dimension. Maturation takes place in oak casks, primarily ex-bourbon barrels, under tropical conditions. The climate accelerates ageing, increasing extraction of oak compounds such as vanilla, caramel, and spice, while also promoting oxidation. The rums used in the blend are typically aged for a range of periods, often between six and twelve years or more, depending on the edition.

Each batch is assembled with a focus on balance rather than uniformity, meaning subtle variations can occur between releases. Bottling strength is usually higher than standard rum, helping preserve structure and aromatic intensity. The overall style reflects a combination of Caribbean traditions, balancing richness with precision. It is more complex than standard blends, with a clear emphasis on integration across different distillation methods and ageing profiles.

Tasting Notes
Nose:
Layered and expressive, with dried fruit, orange peel, and honey. Vanilla, spice, and a light herbal note add depth.

Palate:
Full and structured, with toffee, caramel, and tropical fruit. Pot still influence brings depth and a slightly robust edge, balanced by smoother column still elements.

Finish:
Medium to long, with lingering spice, oak, and dried fruit. A gentle dryness and soft warmth remain, giving a balanced and refined finish.
