This is a traditional medium-dry sherry from Jerez, produced by one of the region's most historic houses, González Byass, founded in 1835. The wine sits between dry styles like Amontillado and sweeter Pedro Ximénez, designed to offer balance rather than intensity. At its core, it's built from Palomino, the classic sherry grape, with a small addition of Pedro Ximénez to soften and round the profile. The base wine is aged for around 3-4 years in oak using the solera system, which brings both consistency and early integration before bottling.

Stylistically, this is very much about approachability. It doesn't aim for the dryness of fino or the weight of a sweet PX - instead, it sits comfortably in the middle, making it one of the easiest entry points into sherry. The slight sweetness is not dominant; it's there to support the nutty, oxidative character rather than cover it. The structure feels relaxed but still defined, with a gentle richness that never becomes heavy. That balance is what makes it versatile - equally suited as an aperitif or alongside food like cheese, nuts, or lightly spiced dishes. There's also a bit of traditional winemaking character behind it: ageing under flor (yeast) followed by oxidative ageing gives the wine both freshness and a subtle developed edge, which is typical of medium sherry styles.
