Created in 1870 by Maurice Hennessy, this expression is widely regarded as the first XO (Extra Old) Cognac, establishing a category defined by extended ageing and greater concentration. Produced by the House of Hennessy in the Cognac region of France, it is built from a large selection of eaux-de-vie, primarily sourced from Grande Champagne, Petite Champagne, Borderies, and Fins Bois crus. Distillation begins with white wines made mainly from Ugni Blanc grapes, chosen for their acidity and suitability for distillation. The wines are distilled twice in traditional copper pot stills, producing a clear eau-de-vie that retains both fruit character and structural potential for ageing.
Maturation takes place in French oak casks over extended periods, often well beyond the minimum required for XO classification. The blend includes eaux-de-vie aged for decades, with some components significantly older than the baseline requirement. Over time, interaction with oak introduces compounds such as vanillin and tannins, while oxidation develops deeper notes of dried fruit, spice, and rancio. Blending is central to the identity of this Cognac. A large number of individual eaux-de-vie are combined to achieve a consistent and complex profile, balancing intensity with refinement.
