Maxime Trijol is both a grower and distiller, working primarily with grapes from its own vineyards, which allows close control over raw material and production. Ugni Blanc grapes form the base of the wine used for distillation. These grapes are chosen for their high acidity and relatively neutral profile, making them well suited to the development of complexity during ageing. Fermentation is carried out without additives, producing a low-alcohol wine that preserves natural aromatic compounds.
Distillation takes place in traditional copper pot stills using a double distillation method. This process concentrates flavour while refining the spirit, with careful separation of heads, hearts, and tails to retain only the most balanced portion of the distillate. The resulting eau-de-vie is structured and suited to extended ageing. Maturation occurs in French oak casks, often sourced from Limousin forests, which are known for their open grain and ability to impart tannin and spice. As a VSOP, the Cognac is aged for a minimum of four years, though older components are typically included in the blend to enhance depth and balance.
Grande Champagne eaux-de-vie are known for their capacity to age well, developing complexity over time. In this expression, the ageing process introduces notes of vanilla, dried fruit, and light spice, while maintaining a degree of freshness and floral character. Blending is carried out to achieve consistency while preserving the identity of the cru. Reduction to bottling strength is done gradually, ensuring that the structure and aromatic profile remain intact.
