Mayfield Sussex Hop Gin is based around a variety of hop originally discovered growing wild in a local hedgerow. The hop was established as a new variety, the Sussex Hop and is now cultivated in just one acre of a thirty acre hop farm in Salehurst to provide the signature botanical to this gin. The Sussex Hop joins seven other traditional botanicals: juniper, orange and lemon peel, coriander, angelica, orris and liquorice. These eight botanicals are each distilled separately and the resulting distillates blended to form the gin. The aroma leads with zesty citrus notes. On the palate, the citrus is balanced out by piney juniper. The signature hops bring a floral character and distinct bitterness to the profile. The striking artwork on the bottle depicts the local Mayfield legend of St. Dunstan and The Devil, in which St. Dunstan pulled The Devil's nose with red hot tongs causing him to roar with such ferocity it could be heard for miles around.
