Caipirinha

Wash the lime and remove the top and bottom. Cut into small segments. Add the sugar and lime pieces into a chilled rocks glass. Crush the lime using a muddler. MUDDLE to ensure the sugar is dissolved. Add dry ice cubes to fill the glass. Add the cachaca and stir. Serve with a stirrer.

A Brazilian bartender's speciality, now famous the world over. The word Caipirinha literally translates as 'peasant's drink'.
