Kir Royale

Ingredients:
15ml Briottet Creme de Cassis 20% (Blackcurrant)
125ml Laurent Perrier La Cuvee Brut NV Champagne
Pour the creme de cassis into the champagne flute. Fill the glass slowly with freshly opened chilled champagne.

Cassis has a blackcurrant flavour and historically was added to Bourgogne Aligote wine by farm workers in Burgundy (France) to make it more pallatable. This drink was named after the war hero and Mayor of Dijon, Canon Felix Kir (1876 - 1968). When the wine was replaced by champagne, the Kir was given its more fitting regal name.
