This wine is produced by Bodegas Barbadillo, a long-established family-owned house based in Sanlúcar de Barrameda within the Jerez-Xérès-Sherry DO. Founded in 1821, Barbadillo is widely recognised for its role in shaping the modern identity of Sherry, combining tradition with a broad and accessible range of styles. This Pedro Ximénez expression is made from sun-dried PX grapes, a process that concentrates sugars and flavours before fermentation, resulting in a naturally rich and intensely sweet wine.
After pressing, fermentation is halted early through fortification, preserving the grape’s high natural sugar content. The wine is then aged oxidatively in a solera system, allowing gradual integration and the development of depth and complexity over time. Positioned as a classic dessert-style Sherry, it offers a traditional yet approachable interpretation of Pedro Ximénez, suited both to standalone service and pairing with desserts or cheese.
