The style leans toward a richer, sweeter profile, combining traditional rum elements with a more modern spiced interpretation. The base rum is sourced from the Caribbean and produced from molasses. Fermentation is carried out under controlled conditions to create a relatively clean wash, followed by distillation in column stills. This results in a lighter spirit that provides a stable foundation for both ageing and flavour integration.
Initial maturation takes place in oak casks, typically for around five years. During this period, the rum develops notes of vanilla, caramel, and light spice, with the tropical climate accelerating the interaction between spirit and wood. Compared to unaged or lightly aged spiced rums, this stage adds a greater degree of depth and structure. Following ageing, the rum is infused with a blend of spices and flavour extracts. Common elements include vanilla, cinnamon, and clove, supported by subtle citrus and sweet notes. The spice profile is designed to complement rather than overpower the base rum, though sweetness plays a noticeable role in rounding the final flavour.
A measured level of sugar is added, contributing to a fuller texture and a smoother mouthfeel. This shifts the profile toward a more accessible and dessert-like style, where spice and sweetness are more prominent than raw rum character. Blending ensures consistency, integrating the aged rum with the added flavour components. Dilution with purified water brings the spirit to bottling strength while maintaining clarity.
