The history of Redbreast dates back to the late 19th century when W & A Gilbey, a well-known Dublin wine merchant, began sourcing pot still whiskey from local distilleries and ageing it in their own sherry casks. This merchant bottling approach was common in Ireland at the time. Gilbey’s would purchase new spirit from the distillery and mature it in bonded warehouses, developing a distinctive house style.
The name "Redbreast" is believed to have been inspired by the robin redbreast, a bird closely associated with the Irish countryside, reflecting the brand's deep connection to Irish heritage.
