Produced in Jerez de la Frontera by Gonzalez Byass, this brandy is firmly rooted in the traditions of Spanish production, particularly the use of the solera ageing system. The region’s long association with sherry production plays a central role, as both climate and cask history directly influence the final character of the spirit.
The base spirit is distilled from wine, most commonly produced from Airen grapes. This variety is favoured for its high yield and relatively neutral profile, allowing the ageing process to define much of the flavour. Distillation is primarily carried out in column stills to produce a clean and consistent spirit, though a proportion of pot-distilled spirit may be included to add weight and aromatic complexity. Maturation takes place in American oak casks that have previously held sherry, typically Oloroso. These seasoned casks contribute significantly to the flavour profile, imparting compounds such as vanillin, tannins, and oxidised wine notes. Residual sherry within the wood adds layers of dried fruit, nuttiness, and gentle sweetness.
The solera system is fundamental to the production method. Rather than ageing in a single cask, the spirit moves through a series of stacked casks known as criaderas. Younger spirit is gradually blended with older stock over time, ensuring consistency while building complexity. The "12" designation refers to the average age of the blend rather than a strict minimum ageing period. Regular transfers between casks encourage controlled oxidation and continuous interaction with the wood. The warm climate of southern Spain accelerates this process, allowing the spirit to develop depth more rapidly than in cooler regions. Dilution to bottling strength is carried out using purified water, ensuring that the texture remains smooth and the flavour profile balanced. The final product reflects a combination of careful blending, cask influence, and traditional ageing techniques.
Tasting Notes
Nose:
Rich and rounded, with aromas of dried fruit, raisin, and fig. Notes of vanilla, toasted oak, and caramel are present, alongside a subtle nutty character from the sherry casks.
Palate:
Smooth and well-structured, with flavours of toffee, dried fruit, and gentle spice. Oak is present but integrated, supporting a balanced sweetness and soft warmth.
Finish:
Medium to long, with lingering oak, vanilla, and dried fruit. A light nutty dryness and soft spice remain, giving a refined and cohesive finish.
