Tanduay traces its origins to the mid 19th century, and remains one of the largest rum producers globally, with a production model built around scale, consistency, and tropical maturation. The base material for Tanduay rum is molasses derived from locally grown sugarcane. Fermentation is carried out using selected yeast strains, designed to produce a balanced range of congeners while maintaining efficiency. Compared to some Caribbean styles, fermentation tends to be shorter, resulting in a cleaner and lighter distillate.
Distillation is conducted using a combination of column stills and, in some cases, pot still components. The column stills produce a lighter, more neutral spirit, while heavier fractions may be retained or blended to add body and depth. This dual approach allows for flexibility in shaping the final profile. The "Double Rum" designation refers to blending and ageing techniques, typically involving the combination of rums matured for different periods.
