Produced in the Philippines by Tanduay Distillers, this expression represents the brand’s interpretation of spiced rum, combining a molasses-based distillate with a carefully constructed blend of natural spices and flavourings. It builds on the distillery’s long history of large-scale rum production, while adapting the profile for a more aromatic and accessible style. The base rum is produced from sugarcane molasses sourced from domestic agriculture. Fermentation is carried out using selected yeast strains under controlled conditions, typically favouring shorter fermentation times to produce a cleaner, lighter spirit. Distillation is primarily conducted in column stills, yielding a refined base rum with moderate congener content and a smooth structure.
Following distillation, the rum undergoes a period of ageing in oak casks, often ex-bourbon barrels. The tropical climate accelerates maturation, promoting rapid extraction of wood compounds such as vanillin, caramel notes, and light tannins. This stage provides a foundation of sweetness and mild oak before the introduction of spices. The defining character of Especia is created through post-ageing infusion of spice extracts and flavour compounds. Common elements include vanilla, cinnamon, and clove, supported by subtle citrus and caramel tones. The formulation is designed to enhance warmth and sweetness while maintaining balance, avoiding excessive heaviness or artificial intensity.
Blending is used to integrate the spiced components with the aged rum base, ensuring consistency across batches. Dilution with purified water brings the spirit to bottling strength, preserving clarity and stability. Unlike traditional rum, where flavour is driven primarily by fermentation and ageing, spiced rum relies on controlled addition of flavouring to achieve its profile.
