Built on the distillery's London dry base, this expression incorporates rhubarb grown on Falls Farm in Northamptonshire, giving it a strong link to local agriculture and seasonal production. The focus shifts from a purely botanical profile to one where fresh fruit plays a central role, while still retaining the structural framework of gin. Production begins with a neutral grain spirit distilled with a core set of traditional botanicals, including juniper, coriander seed, angelica root, and citrus peel. This base gin is produced in copper pot stills using a single-shot method, ensuring that botanical integration occurs during distillation rather than through later blending.

The defining element is the use of fresh rhubarb, which is introduced after distillation. Rather than being redistilled, the fruit is steeped in the finished gin, allowing its natural colour, acidity, and flavour to infuse directly into the spirit. This process preserves the bright, tart character of rhubarb, which would be diminished if exposed to heat during distillation. The rhubarb used is typically harvested from the farm itself, contributing to a more direct and seasonal flavour profile. The infusion process also introduces a degree of natural sweetness, balancing the sharp acidity of the fruit without requiring heavy additional sugar. Careful filtration follows infusion to remove solids while retaining colour and flavour intensity. Dilution is carried out using treated water to ensure consistency and stability in the final product.

Unlike London dry gin, this expression falls into the flavoured gin category due to the post-distillation addition of fruit. The profile is therefore less juniper-dominant, with fruit taking a leading role while the underlying botanical structure provides balance. The result is a gin that combines fresh, tart fruit character with a clean and recognisable gin base, designed for accessibility and versatility.
