Released to mark the long-standing association between Bollinger and the James Bond franchise, this cuvee commemorates the 25th film and reflects both heritage and exclusivity. The 2011 vintage is presented here in magnum format, enhancing ageing potential and integration while maintaining the identity of the original release. What distinguishes this wine technically is its composition. Unlike most Champagne blends, this cuvee is made from 100 percent Pinot Noir sourced exclusively from the Grand Cru village of Ay, a historic site for Bollinger. This single village, single variety approach is highly unusual and was used deliberately to showcase the character of Ay Pinot Noir.
The 2011 vintage itself was atypical, with a warm and dry growing season producing ripe yet structured fruit. Bollinger’s cellar master used these conditions to create a wine with both power and freshness, rather than the broader, richer profile seen in some other years. Vinification follows traditional Bollinger methods, with fermentation carried out to preserve structure and depth. Ageing on lees extends for several years, contributing autolytic complexity such as brioche, toasted notes, and texture development. The dosage is relatively moderate, around 8 grams per litre, allowing balance without masking the natural structure.
The magnum format plays a significant role in the final profile. Larger bottles slow the ageing process, leading to finer mousse, greater integration of flavours, and improved longevity. This results in a more cohesive and refined expression compared to standard bottle sizes. Presentation is a key element. The bottle is finished in black with "25" formed from Bond film titles, reinforcing its collector status. However, beneath the design, the wine itself remains a serious vintage Champagne with a strong technical foundation. The overall style is structured and Pinot Noir driven, combining power with precision. It sits closer to Bollinger's richer house style but is more focused due to its single variety and terroir expression.
