Description

Description:

In methuselah format (6 litres, equivalent to eight standard bottles), this cuvee demonstrates how scale influences Champagne development, with slower evolution leading to greater harmony between fruit, oak, and autolytic character. The composition follows Bollinger's established house style, built around a majority of Pinot Noir, supported by Chardonnay and Pinot Meunier. Fruit is sourced predominantly from the Montagne de Reims, with reserve wines forming a significant portion of the blend. These older components, often matured for extended periods, contribute depth and continuity.

A distinctive element of production is the use of small oak barrels for part of the fermentation. This introduces controlled oxygen exposure at an early stage, enhancing texture and allowing the wine to develop a more structured and vinous profile. Each vineyard parcel is vinified separately before blending, ensuring precision in the final composition. Extended ageing on lees develops characteristic notes of brioche, toasted almond, and pastry, while preserving freshness and definition. The interaction between fruit and secondary flavours is more gradual in this format, resulting in a smoother and more integrated profile.

Handling at this scale requires specialised techniques for riddling and disgorgement, making this format relatively rare and often reserved for large gatherings or long-term cellaring. The overall style is broad and layered, with a strong Pinot Noir backbone supported by refined texture and balanced complexity.
